Raw Blackberry Cheesecake

  • 1 1/2 cups of walnuts
  • 1 cup pitted dates
  • 1/4 tsp salt divided in half
  • 1 cup blackberries
  • 1 cup cashews, soaked in water for at least two hours and drained.
  • 1/2 cup melted coconut oil
  • 1/3 cup maple syrup
  • 2-3 tsp of Purple Powder


For base: Blitz walnuts, dates and half of the salt in food processor until crumbled and ingredients stick together when squeezed - press all into bottom of a baking pan (11’ x 7.5”) greased with coconut oil. Set aside.

Top layer: Blitz cashews, blackberries, melted coconut oil, maple syrup, Purple Powder and other half of salt in food processor until smooth as possible. pour over base and smooth out. Chill in fridge for at least 3 hours. cut into bars and serve. 

These bars can be frozen and taken out, thawed and served as a treat. For even greater indulgence serve with coconut yogurt (CoYo)
